Ingredients

  • tbsp Essential Olive Oil
  • 4 Unearthed Bavarian Frankfurters
  • 1 onion, finely chopped
  • 2 clove/s garlic, finely chopped
  • tsp smoked paprika
  • 400g can Essential Chopped Tomatoes
  • 200ml chicken stock
  • 400g can Essential Borlotti Beans in Water, drained
  • 1 tsp thyme leaves (optional)
  • 1 pinch caster sugar
  • Crusty bread or baked sweet potatoes to serve (optional)

Method

  1. Heat 1 tbsp oil in a large frying pan. Add the frankfurters and fry for 3 minutes on each side until golden; set aside and keep warm. Add the remaining ½ tbsp oil to the pan, with the onion and a pinch of salt and fry for 4-5 minutes until softening, then stir in the garlic and paprika; fry for another 2 minutes.

  2. Tip the tomatoes, stock and beans into the pan. Add the thyme (if using) and sugar; simmer for 15-17 minutes, stirring occasionally, until the beans are coated in a thick sauce.

  3. Slice the frankfurters diagonally and add to the pan for a final 2-3 minutes. Serve with crusty bread or baked sweet potatoes, if liked.

Cook’s tip

Up your veg count. Get closer to your 5 a day by adding a chopped celery stick and a grated carrot with the onion – or omit the onion and use a pack of ready-chopped soffritto.
